The boys are now 19 months old and nudging the 450kg mark. From now until November their job is to lay down as much meat and Intramuscular fat as possible. Typically these animals would be sent off the butchers soon. At Willarah we want to finish the animal off to prime condition. This takes a lot longer on 100% Grass but makes for a much deeper and richer flavour in the meat.
Over Winter we aim to maintain their weight and then as we enter Spring they should pile on the kg’s and reach Prime condition in time for processing (November-December)
As we improve our pasture over time we will then be able to maintain a steady increase in weight over winter and finish the cattle off earlier or hold onto them for the same amount of time and get an even higher carcass yield.
